Novikov is one of Mayfairs most loved restaurants, and now Novikov Ibiza has opened in probably the best location on the island giving it instant hottest restaurant status. Meet its founder, Andy Martin, and discover his itinerary for a perfect Ibiza day.

The Akame Nigiri at Novikov Ibiza is part of its Pan-Asian gastronomic offering, and one element which makes a night at the restaurant, a memorable one.
Creating a beautiful nightlife experience is in my blood… People don’t go for dinner because they’re hungry, they go for an experience. It’s how we make them feel that they remember. I’ve been working in restaurants & clubs for 25 years, my previous partners have been DJ Tiesto and Amy Sacco from Bungalow 8, I’ve learnt a lot from some amazing people.
For Novikov, we chose to partner with the Gran Hotel… because it is the first & best 5* hotel on the island. Our entrance to Novikov Ibiza is directly opposite the most famous nightclub in the world, the original Pacha. To me, it is the best spot on the planet, let alone the island.
The food we prepare is… Pan Asian, the best Asia has to offer from Peking duck to Japanese scallops. We have scoured the planet for the best chefs, for example flying in chefs directly from China to create the duck the authentic way.

It feels like the right time to bring it to Ibiza... right now the gastronomy on the island really taking off, and it's a very exciting place to be.
For me an evening at Novikov is all about… From the greeting at the door to the dining and later, to the dancing. We will be offering a flawless Ibiza evening from start to finish with staff that actually care, passionate chefs, mixologists that invent, and DJs that read their crowd. Don’t forget Sean the magician that amazes everyone swaying through the tables.

My ultimate Ibiza day involves… A boat leaving at lunch time, sailing to Formentera, late lunch at Juan y Andrea, sail back before sunset, straight to the Ushuia Hotel to see my pal Martin Garrix's show, dinner at Novikov at 11pm, then Pacha around 2am to dance till 6am.
My favourite beach is… Cala Gracioneta.

Andy Martin of Novikov's favourite Ibiza beach is the the secluded cove at Cala Gracioneta on the south west of the island.
The highlight of my career so far has to be… owning and opening Novikov Ibiza last month.
The books I go back to time and again are... Setting the Table by Danny Meyer, the definitive book about owning and running restaurants and Alcohol Lied to Me by Craig Beck, which helps me keep a handle on my lifestyle.
The project closest to my heart is… my two year old son Murphy
