At the helm of the ephemeral The Goring fish restaurant, Rick Stein and his son Jack have devised — in collaboration with the hotel’s Michelin-starred executive chef Shay Cooper — a menu to celebrate the best of Cornish bounty. Starting from £12, the dishes from the A Taste of Cornwall menu include starters such as Cornish lobster bisque with chervil and a curried Cornish crab salad and mains such as grilled Padstow lobster or grilled lemon sole. Although predominantly fish-based, there are options such as a charcuterie selection and a succulent shoulder of Cornish Lamb to keep any meat-loving diner happy.

The desserts and drinks menu are also suitably Cornish. Dollops of Rodda’s clotted cream accompany strawberries; wines are sourced from the Camel Valley and the cocktail menu features Cornish-distilled spirits such as Tarquin’s Dry Gin as well as a rum-based cocktail aptly named Poldark Punch.
