After a five-month renovation, Colony will occupy the space that formerly housed the Greenhouse restaurant, located on the hotel’s third floor. The restaurant’s name is a nod towards the eighteenth century sea voyages undertaken by British traders in the East Indies and colonial tradition. The interior, tastefully adorned by ornate leafing and vintage-style maps exudes a colonial glamour, where waitresses dressed in vintage-inspired butler uniforms designed by Mineo San of Art Marginal, will serve the guests colonial-accented dishes offering a little taste of the island’s rich past with a modern twist. Colony’s nostalgic retrospect, under the direction of the award-winning New York based designer Tony Chi, is to be explored in a very modern way- in a fusion of East and West. As designed by Chi, the restaurant floor will become the stage for 8 different concept kitchens providing ‘live’ culinary spectacles that will allow diners at Colony to travel on an evocative multi-sensory journey through Singapore’s colonial heritage cuisines. Colony can accommodate up to 260 diners, and will offer breakfast, lunch, afternoon tea and dinner daily, and a vintage Champagne brunch on Sundays.
