Highlights include Dorset crab with courgette, squid and caviar - a perfect match for a crisp glass of Dom Pérignon Vintage 2020 - and an intriguing sea-meets-sky dish of pigeon from Brittany served with aubergine, sardine and lemon balm, which comes with the Rosé Vintage 2006. Following the dishes paired with four kinds of champers, diners can expect a 10-year-old tawny port to arrive alongside an assortment of French cheeses, with a measure of Hennessy X.O. rounding off proceedings with the blackberry / mint contemporary vacherin pud.
