Sip gin in the beautiful surrounds of Rosewood London's Edwardian courtyard at the Botanist Gin's ephemeral summer greenhouse. Decorated with herbs such as rosemary and mint – that are used as garnishes and ingredients in drinks – the courtyard offers a peaceful spot to enjoy a G&T or two... Unique gin cocktails such as the 'Loch Indaal' – a take on the classic dry martini garnished with a mineral stone – are on offer, as are dishes such as chicken and tarragon pie or a lighter courgette, ricotta and dandelion salad are served straight from the Holborn Dining Room's kitchen. Summer Garden at Radio Rooftop
Spanish-inspired floral installations, private cabañas and refreshing tipples at ME London's stylish Radio Rooftop make for a perfect recipe for escaping the capital's rising temperatures. Views of the Strand and Westminster pair well with delicious cocktails such as the Fleur Sauvage–a Grey Goose cocktail with notes of elderflower, ginger and pear. Cabañas are available to reserve through the end of September.
Sunborn London's Summer Deck
Climb aboard the Sunborn London, London’s first Yacht Hotel, for its summertime pop-up in partnership with Laurent Perrier. Moored in the Royal Victoria Docks, Sunborn’s top deck offers stunning views of the London skyline, which you can enjoy while savouring a glass of Laurent Perrier or a champagne-based cocktail such as Sippin’ Dusk, which is made from Laurent Perrier Cuvée Rosé with Napoleon mandarin liquor and Passoā passion fruit liquor. Complementing the nautical setting, the menu features an array of seafood tapas and sharing dishes. Until 3rd September.
Avairy
Located on the 10th floor above Finsbury Square, Aviary not only offers delicious food and cocktails but great views too over the City and buildings such as the gherkin. Make sure you order steak or fish dishes, they are a specialty here and are cooked over coals. Though there are good vegan and vegetarian options for those wanting to be a little more virtuous. For the summer months the Aviary terrace will also be hosting yoga, boxing, and ballet classes. The Aviary’s RooFit Summer Series will run until the 23rd August.
Rumpus Room
Set on the 12th floor of the elegant Mondrian hotel, The Rumpus Room offers one of the best panoramic views of London. An outdoors terrace is best for sunny days – tall glass sides keep out the wind if there is a breeze – but if the weather isn't fair, refuge can be sought inside. Interiors designed by Tom Dixon are sumptuous with jewel-hued seating and brass tables, but still provide excellent views. The transatlantic cocktail menu features both British and New York-style beverages such as the fruity and spicy Harry's Legacy cocktail, pair it with an American hotdog to complete the experience. Expect DJs from Thursday to Saturday and live music on Wednesday nights.

Enjoy a bit of Aperitivo at Somerset House’s riverside terrace this summer at Peroni Ambra a pop-up bar. Inspired by beauty and the flavours of rural Italy’s Chinotto fruit groves, the pop-up bar is a little slice of Italian bliss in the heart of London. Pair a refreshing pint with quintessential Italian dishes such as pizza, or sharing boards of affettati and formaggi. Until September.
