For the ultimate field-to-fork dining, nip out of London to boutique hotel Thyme. Set in the honey-hued village of Southrop, surrounded by grazing sheep and green pastures it is a delightfully comfortable, rustic retreat. With a focus on home-farmed produce, the estate’s impeccably maintained vegetable garden provides the hotel’s recently refurbished restaurant The Swan at Southrop – the village’s charming Norman pub – with freshest, seasonal produce.

 

 

Devised by head chef Matt Wardman and culinary director Charlie Hibbert, the menu is shaped by the week’s best produce.

The food is delicious.

A starter of asparagus and poached egg comes with a swirl of melted sorrel butter and a dish of whipped ricotta and radish comes festooned with pea shoots and vegetables straight from the garden, while estate-reared lamb is succulent and served pink. With plans to become an epicurean destination, Thyme are also launching The Ox Barn, a fine dining restaurant later this year.
